3 medium carrots, peeled and roughly chopped
1 cup (250ml) oil
2 cups (440g) sugar
a pinch of salt
2 cups (250g) plain flour
1 tablespoon baking powder
butter and flour for greasing/flouring the cake tin
1. Preheat oven to 180 degrees C. Grease and flour a 20cm cake tin.
2. Add all the ingredients in your Ninja blender except the flour and baking powder. Blend well till the carrot is totally blended in.
3. Add the flour gradually. If it gets too difficult in the blender, transfer to a bowl and mix the flour in by hand. Add the baking powder last and mix in just to combine.
4. Bake in the preheated oven for 40 minutes. Remove from oven, allow to cool and then remove it from the tin.
