This cucumber soup is great for warm weather but you could also prepare it anytime because it’s very healthy and it has great nutritional value.
Ingredients:
1 large cucumber chopped
1 tsp salt
1 avocado
juice of whole lemon
1 clove garlic, minced
1 cup spinach
4-6 tbsp. fresh dill, chopped
Directions:
You will need only 5 minutes to prepare this recipe. Place cucumber, avocado, salt, lemon juice and 1/2 of the spinach into your Ninja blender and blend until smooth and creamy. Chop remaining spinach and mix into soup. Add dill and garlic, blend very briefly (2-3 seconds) to mix. Pour into bowls and serve.
